The pectinase is prepared by deep fermentation of Aspergillus niger. This product is a highly purified pectinase powder containing esterase, hydrolase and lyase which hydrolyzes, esterizes, and cleaves pectin, respectively, to produce galacturonic acid and oligogalacturonic acid.

Definition of the unit of the enzyme activity: One unit (U/g or U/ml) is defined as 1 g (solid powder) or 1 ml (liquid) of enzyme to hydrolyze pectin to produce 1 g of galacturonic acid (measured with sodium thiosulfate) in citric acid - sodium citrate buffer (0.1 mol/L, pH 3.5) in 1 hr (reaction is 30 min) at 50°C (QB 1502-92).

Applications:

1. In fruit juice processing, addition of pectinase can accelerate the filtration, increase the juice yield, reduce the viscosity of juice, prevent puree and condensed juice from gelating, increase the grape Juice color, and promote the decomposition of pectin.

2. In wine production, addition of pectinase can increase the yield of grape juice and wine, increase the clarification, and accelerate the filtration greatly.

3. In wood processing, addition of pectinase can increase the wood permeability greatly, improve the antiseptic effect of wood preservatives.

4. In feed industry, addition of pectinase can decompose semicellulose, pectin and the polysaccharides of plant cell wall, and thus increase the utilization of nutrients.

(1) For soybean meal based diets of laying chickens, broilers, chicklings, piglets, and aquatic animals: 10-12 g/ton.

(2) For soybean meal based diets of growing pigs, ducks, geese, and ruminants: 10-15 g/ton.

(3) For miscellaneous meal based diets of laying chickens, broilers, growing pigs, ducks, geese, and ruminants: 12-15 g/ton.

(4) For miscellaneous meal based diets of chicklings, piglets and aquatic animals: 10-12 g/ton.

Storage:

Store in dry and cool (below 25°C) area with ventilation. During transportation, avoid direct exposure to strong sunlight, rain and moisture. The enzymes will lose activity at high temperature or under strong sunlight. The enzyme activity can be maintained at least 85% for 6 months when stored at room temperature.
